These cookies are AWESOME! I remember I went on a huge kick with these bad boys and was making them just about every other week when Abby was younger. I hadn't made them for a while because well... to be frank... they constipate me (must be TOO much fiber, LOL!) and the coconut gives me gas. ROFL! I am sure you wanted to know that! At least when you go to make them, you will be thinking about constipation and gas! What a lovely memory! LMBO! Anyway, these are freaking awesome and everyone here loves them!
Go ahead and make them, but be forewarned, they are ADDICTIVE! ;)
Raisin Crunch Cookies
You Need:
1 1/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 c. oats
1/2 c. {1 stick} butter
3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg
1 tsp. vanilla
1 c. Raisin Bran (I just used the Raisin Bran Crunch and they turned out awesome!)
1 1/4 c. shredded coconut
1/2 c. raisins
You Do:
Preheat oven to 350. Mix flour, baking powder, baking soda and oats in a bowl and set aside.
Beat butter and sugars in a large bowl w/ hand mixer until light and fluffy.
Add egg and vanilla, mix well.
Gradually add flower mixed, beating until well blended.
Add cereal, coconut and raisins, stir until well blended.
Drop heaping teaspoonfuls of dough onto baking sheet.
Bake 14 - 16 mins or until lightly browned.
Remove to cool on wire racks.
