This is a recipe that I like to make every now and then, and it's relatively low in fat and calories. Only 6 grams fat and 310 calories per serving. It takes care of meats, veggies and starch all in one! :) I hope you all get a chance to make this in your homes, even my 2.5 year old likes it! ;)
Unstuffed Cabbage Skillet
3/4 lbs extra lean ground beef
1 medium yellow onion, chopped
1 pkt. Good Seasons Zesty Italian Salad Dressing & Recipe Mix
1 can (28 oz.) crushed tomatoes
8 cups shredded cabbage (about 1 lb)
1 c. water
1 c. Minute Brown Rice, uncooked
Here are some of the ingredients... I don't use the Minute Brown Rice, it doesn't seem to cook well in the "minute" brand. I also had diced tomatoes on hand, which I just put into a bowl and used my immersion hand blender and pulsed a few time, crushing them up!
Now, brown your hamburger meat and your chopped up onions, toss in your package of Good Season's Italian seasoning. Give it a little stir every now and then, let it brown up and do it's thing...
While your meat is browning, you need to shred up your cabbage. I suppose you could go buy the already shredded cabbage, like for coleslaw, but a head of cabbage is relatively inexpensive!
Then, after the meat is browned, you need to add your cabbage, and your crushed tomatoes!
Give it a little stir action there in your pan, reduce the heat to simmer and cover w/ lid, nice 'n tight. Let it simmer for about 20 - 25 minutes or until cabbage is tender.
After a fashion, you will add your rice and water, giving it another stir. Bring the heat up for a minute or two, then cover it with a lid, reduce the heat, and cook for 5 minutes more. Give it a little stir and let it sit before serving, it's so tasty!!! :)
